Toasty Fattoush Salad

Ingredients Method
  • 2 whole thin pita breads
  • 1 tbsp extra-virgin olive oil
  • ¼ tsp CRISTA Zingy Seasoning Salt
  • 2 bunches Romaine lettuce chopped
  • 2 medium cucumbers halved and sliced
  • 2 medium tomatoes chopped into 1-inch pieces
  • salt to taste
  • 1 medium green bell pepper cut into1-inch pieces
  • 5 red radishes sliced
  • ½ cup chopped fresh parsley
  • ¼ cup chopped fresh mint leaves
  • INGREDIENTS FOR DRESSING (can be made in advance):
  • ¼ cup extra-virgin olive oil
  • 2-3 tbsp lemon juice
  • ½ tsp salt
  • ½ tsp ground sumac
  • ¼ tsp black pepper powder
  • ¾ tsp CRISTA Toasty Za’atar Spice Mix

Preheat the oven to 375 deg F. Arrange the pita bread in a single layer on an un-greased baking sheet. Brush oil on the pita bread and sprinkle CRISTA Zingy Seasoning Salt. Bake until crisp for 8-10 mins turning once in between and cool. Meanwhile in a large salad bowl or large salad platter, toss the romaine lettuce, tomatoes, cucumbers, green bell peppers, radish, parsley and mint. Now whisk the prepared dressing, drizzle over the salad, toss and coat well. Then break the pita bread into small pieces. Lastly sprinkle them over the salad and serve immediately.
