Roman Pasta with Cheese and Pepper

Ingredients Method
  • 200gms pasta of your choice (Spaghetti, Tagliarini, Bucatini)
  • 3 tbsp cubed butter
  • 1 tsp freshly cracked black pepper
  • ¾ cup finely grated parmesan cheese
  • 1/3 cup finely grated pecorino cheese
  • ¾ cup reserve pasta water
  • 2 tbsp CRISTA Roman Cacio e Pepe Seasoning
  • Salt to taste

Ingredients for garnishing: handful fresh basil leaves

Preparation

In a large pan boil 4-5 cups of water. Season with salt and 1 tbsp oil. Add the pasta of your choice and cook, stirring occasionally for 2 mins before it is tender. Drain and reserve ¾ cup pasta water. Melt 2 tbsp of butter in a large heavy skillet over medium heat, add pepper and cook swirling the pan until toasted for about 1 min. Add ½ cup of the reserved pasta water to the skillet and bring to a simmer. Now add the pasta and remaining butter, CRISTA Roman Cacio e Pepe Seasoning, salt to taste and mix well tossing with tongs. Reduce the heat to low and add parmesan cheese stirring and tossing with tongs until melted. Remove pan from the heat, add pecorino cheese and toss until the cheese melts and the pasta is coated with the sauce. You can add more water if required and if the sauce is dry. Transfer the pasta into a bowl and garnish with fresh basil leaves and serve.
