Healthy Grilled Vegetables and Warm Cottage Cheese Salad

Serves: 4

Ingredients Method
  • 2 tbsp crushed garlic
  • 2 tbsp finely chopped basil
  • 4 tbsp warm olive oil
  • 1 cup vegetables (zucchini, onions, carrots, mixed bell peppers, etc.)
  • 200gms cottage cheese cut into thin square pieces
  • 2 tbsp CRISTA Grilled Vegetable Seasoning
  • salt to taste

Ingredients for garnishing: Lemon and freshly chopped mixed herbs

Preparation

In a small bowl mix warm olive oil, garlic, and basil. Brush the cottage cheese slices with this mixture. Place the slices in the oven for 10 mins on low temperature to keep it warm. Cut the vegetables into square pieces and toss them with the remaining olive oil mixture. Add CRISTA Grilled Vegetable Seasoning and place under the grill for 5-7 mins. When cooked, toss in the warm cottage cheese pieces gently. Garnish with lemon, fresh mixed herbs and serve warm. You can even add mushrooms to the vegetables OR even put the warm salad on a bed of crispy iceberg lettuce and serve immediately.
